Growing up, I don't recall having this Easy Corn Casserole ... my mom often made Scalloped Corn (which I love!) for Thanksgiving. I first recollect having this dish when I was attending a mom's group at a local YMCA. I enjoyed it so much, I knew I had to get the recipe. I've used this recipe for about 15 years and it's always a hit! Although we enjoy it at Thanksgiving, we also eat it occasionally throughout the year for regular meals! It's a comforting side dish casserole and it's so easy to make!

Easy Corn Casserole

Prep Time: 5 minutes
Cook Time: 45 minutes
Yield: 6-8 servings

Ingredients
  • ½ cup (8 tbsp. or 1 stick) butter, melted
  • 2 large eggs, beaten
  • 1 box (8.5 oz.) dry corn bread mix
  • 1 can (15 oz.) whole kernel corn, drained
  • 1 can (14.75 oz.) creamed corn
  • 1 cup sour cream

Instructions

1. Preheat oven to 350°F. Spray an 8x8-inch baking dish with cooking spray and set aside.

2. In a medium bowl, combine all ingredients. Spoon mixture into prepared dish.

3. Bake for 45 minutes or until the top is golden brown.

  2. I grew up on scalloped corn too, but we love a good corn casserole now. We normally have ours with BBQ, but it would be a perfect Thanksgiving side!
