This is another one of those meals I have fond memories of from my childhood. I love that these Salmon Patties are made with cornflakes instead of crackers like most recipes. My grandma made them this way ... my mom made them this way ... and now I continue with my own kiddos. Nothing fancy about them ... but they are oh, so good! We always had these salmon patties with fried potatoes and creamed corn - always!
Salmon Patties
Yield: 4-6 servings
1 can (14.75 to 16 oz.) pink salmon
2 large eggs, beaten
3/4 cup cornflakes, crushed
Vegetable oil
Drain salmon. Remove skin and bones, if desired. In a medium bowl, flake the salmon. Add eggs and the cornflakes. Mix by hand until mixture comes together. If the mixture seems "loose", add a little more cornflakes. Form into patties. Heat about 1/4-in. of oil in a skillet over medium-high heat. Fry patties in oil until browned. Carefully flip over and fry the other side until browned. Drain on paper towels.
Serve hot - with fried potatoes and creamed corn - or whatever your family enjoys!
