Ingredients 

White Chocolate Mascarpone Cream

  • 1 cup mascarpone, cold
  • 1 cup heavy whipping cream
  • ½ teaspoon imitation rum
  • 1 cup powdered sugar
  • ½ cup white chocolate chips

Raspberry Layer

  • 4 cups frozen raspberries, thawed
  • ½ cup powdered sugar

Assembly

  • 44 ladyfinger biscuits, about 2 packages
  • ½ cup white chocolate, grated

Instructions 

Make the mascarpone cream:

  • In a large bowl, beat the mascarpone, heavy cream, powdered sugar, and imitation rum with an electric mixer until stiff peaks form.
  • Melt the white chocolate chips in the microwave, stirring every 30 seconds until smooth. Let cool slightly.
  • Gently fold the melted white chocolate into the mascarpone mixture. Set aside.
