Tomato & Basil RITZwiches

Brian and I finally made some plans on what we want to do in our backyard. Although we only have plans for half of the yard, at least it’s a start, right? We’ve lived in our current home since 2013 and other than putting in a pool, we’ve been at a loss as what to do with the rest of the yard …. so it’s sat as an empty dirt lot for almost 3 years!

We hired our gardener to put in a pathway from our back patio to the pool (we’ve been walking through dirt!!), put a short wall around our pool equipment, make an outdoor seating area for a table and chairs, and to fill in that half of the yard with small rocks.

It already has made a huge difference in how that half of the yard looks and I can’t wait to have the seating area put in so we can start enjoying more time outside! Brian and I are still discussing what we want to do with the other half of the yard, but it feels good knowing we have made some progress! Finally!!

We’re also already planning on inviting some friends and family over for a BBQ and pool party to break-in the new features in the backyard. Of course, any get-together means food!! One of my favorite parts, besides the company – obviously! 🙂 You can bet these Tomato & Basil RITZwiches will be on the menu!

While shopping at Safeway, I saw Limited Edition RITZ Ultimate Butter crackers! I knew I had to try them, so I picked up a few boxes! I love keeping RITZ crackers on hand for snacking – plus, with a few simple ingredients, I can have easy snacks or appetizers when company drops by! They also help me keep entertaining guests easy-peasy!

Ingredients 

  • 16 RITZ crackers
  • cup chive and onion cream cheese
  • 16 grape tomatoes, halved
  • 16 small basil leaves

Instructions 

  • Spread cream cheese on crackers. Top each cracker with 2 tomato halves and a basil leaf.
  • Serve immediately.

Notes

  • You can always add some everything bagel seasoning for a fun kick!
