Pineapple Cottage Cheese Salad

Have you ever heard the saying, kids say the darndest things?! Seriously, sometimes I can’t help but laugh at some of the things that have come out of my kids’ mouths! I was chatting with my mom the other day and she mentioned that she was making salmon patties for dinner. If you remember my salmon patty post, I mention that we always had fried potatoes and creamed corn with salmon patties – always. I told my mom that Isaac would be jealous because that is one of his favorite meals …. which made my mom ask me about something Isaac said a long time ago when he was about 4 or 5 years old!! When Isaac was younger, he was convinced that brewed tea was dirty dog water and that creamed corn was old people food. Ha!! I have no idea where he came up with those ideas but my mom and I just couldn’t help but laugh at the time. And we still laugh about it!! 😀

Isn’t it funny how we have those kinds of food associations – like certain things just belong together?! I bet you have meals like that, too! We had Runzas on the menu last week and we almost always have them with applesauce and cottage cheese … don’t ask me why because I have no idea. They just belong together!

A healthy choice

I had a little bit of cottage cheese leftover in the container and decided to use it for my lunch! I used to make this Pineapple Cottage Cheese Salad a few years ago and had kind of forgotten about it. It’s nice that this salad is easy, healthy and delicious! It made a nice light lunch. I forgot how much I enjoyed this Pineapple Cottage Cheese Salad – I’ll have to pick up more Shamrock Farms Cottage Cheese on my next grocery trip!

Ingredients 

  • 1 cup cottage cheese
  • ½ cup pineapple tidbits
  • ½ cup dried cranberries
  • ¼ shelled sunflower seeds
  • 2 tablespoons pineapple juice, from pineapple can

Instructions 

  • Add all ingredients to a large bowl.
  • Stir gently to combine.

  • Try raisins instead of cranberries.

    Kids do say the darnedest things! And I used to always love eating cottage cheese with pineapple when I was younger and haven't thought about it in a long time. This looks delicious!
