Ingredients

  • 4 bone-in pork chops, about 1 inch thick (approximately 2 pounds)
  • 1 tablespoon olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons ground mustard
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • teaspoon chili powder

  • Remove the chops from the grill, cover with foil, and let them rest for 5 to 10 minutes before serving.

Notes

🥡 STORAGE

Store cooled pork chops in an airtight container in the refrigerator for up to 3 days.

♨️ REHEATING

  • Air fryer: 330°F for 3 to 4 minutes or until heated through
  • Microwave: Cover with a damp paper towel and heat in 30-second intervals until warm
  • Oven: Preheat to 300°F, cover pork chops with foil, and bake for 10 to 12 minutes
  • Skillet: Reheat over medium-low heat with a splash of broth or water, covered, until warmed through

❄️ FREEZING

Freeze cooled pork chops in a freezer-safe container or bag for up to 2 months. Thaw in the fridge overnight before reheating.

💡 TIPS FOR BEST RESULTS

  • Use a blend of hickory and maple wood chips for the best smoke flavor.
  • Let the pork rest after smoking to lock in juices.
  • Customize the spice level with cayenne or red pepper flakes.
  • Try brushing with spicy oil before seasoning for an extra kick of heat.

🍳 ALTERNATE COOKING METHODS

  • Oven Instructions:
Preheat your oven to 250°F. Place seasoned pork chops on a wire rack set over a baking sheet. Bake for about 60 to 75 minutes, or until the internal temperature reaches 160°F. Let rest 5 to 10 minutes before serving.
  • Air Fryer Instructions:
Preheat your air fryer to 330°F. Place seasoned pork chops in a single layer in the basket. Cook for 14 to 18 minutes, flipping halfway through, or until the internal temperature hits 160°F. Let them rest briefly before serving.
Note: These methods won’t have the same smoky flavor, but you’ll still get juicy, flavorful pork chops with a beautiful crust.

♻️ LEFTOVERS

Chop leftovers and add to salads, pasta salad, sandwiches, or fried rice. You can also use the rub on veggies like mushrooms and onions, and roast them for a flavorful side.
