Instructions
Preheat your BBQ or smoker to 250°F.
Pat the pork chops dry with paper towels and set them aside on a tray or plate.
In a small bowl, combine garlic powder, onion powder, ground mustard, salt, black pepper, and chili powder.
Brush both sides of each pork chop with olive oil.
Sprinkle the seasoning mix evenly over both sides of the pork chops. Pat it on gently – do not rub.
If your smoker is ready, place the chops directly on the grill. If not, return them to the fridge until the smoker reaches temperature.
Smoke the pork chops for 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 160°F.
Remove the chops from the grill, cover with foil, and let them rest for 5 to 10 minutes before serving.
