Peaches are my favorite fruit. I look forward to seeing them in the supermarket every year. They are just starting to show up here in Phoenix stores ... Yay!!

For the Summer Fun Series, I wanted to share an easy no-bake treat. Although a bit unconventional, this cheesecake get it's flavor from Jello gelatin. Technically, you could use your favorite flavor ... obviously, peach just happens to be mine! :)

2 (8 oz.) blocks Challenge Cream Cheese, softened
½ cup granulated sugar

1 container (8 oz.) frozen whipped topping, thawed
1 (9-inch) graham cracker crumb crust

Place the cream cheese in a large mixing bowl. Mix it well with an electric mixer. Add the sugar, peach gelatin and coffee creamer. Mix well. Add the whipped topping and mix until well combined.
