  • 2 cups cooked and mashed sweet potatoes, (about 1 ½ pounds)
  • cup unsalted butter, melted
  • ½ cup granulated sugar
  • 2 large eggs, slightly beaten
  • ¾ cup evaporated milk , or half-and-half
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • whipped cream, for serving (optional)

Instructions 

  • Preheat oven to 350°F.
  • Roll out pie crust and fit it into a 9-inch pie plate.
