Y’all, can this year slow down just a little bit?! I’m having a hard time processing that the calendar now says July! Where did January, February, March, April, May, and June go?!

Even though I don’t want to, I guess I just need to accept that time is flying by.

For me, July means cookouts, pool parties, and family reunions. And don’t forget the 4th of July! In other words, July means lots of food. ? Food is my favorite part.

One dish that must be present for all of our get-togethers is baked beans – and this recipe needs to be on the menu for your next gathering!

I love that you don’t have to soak the beans beforehand and the Instant Pot pretty much does everything for you! Who doesn’t need more recipes like that?! You just put everything into the Instant Pot and give it a stir. Then you set the pressure and time – and let it do its thing! Sooooo easy!

That leaves me plenty of time to make another dish – like a dessert! Mmmmm!

Ingredients 

  • 1 pound dried navy beans, rinsed and sorted
  • 4 ½ cups water
  • cup molasses
  • ¼ cup brown sugar
  • 1 medium onion, chopped
  • ¼ pound salt pork or bacon, cut into bite-sized pieces
  • 1 tablespoon Dijon mustard
  • ½ teaspoon salt

Instructions 

  • Combine all ingredients together in the pressure cooker.
  • Set pressure valve to sealed and then set manual pressure to 90 minutes on high pressure.
  • After doing a quick release, stir and serve.

Notes

  • Always rinse and inspect your beans before using to check for rocks or other materials.
