I’ve been in a doughnut mood lately. As some of y’all may know, I’m not really a breakfast eater type person. Toast and coffee …. that’s my thing. Even when it comes to doughnuts, I just want one. My family isn’t complaining, it’s more for them!

Orange Doughnuts with Orange Glaze

Ingredients 

For the doughnuts

  • 3 ¼ cups flour
  • 2 teaspoons baking powder
  • Pinch salt
  • 2 eggs, slightly beaten
  • cup sugar
  • 1 teaspoon vanilla
  • 1 teaspoon grated orange peel
  • cup orange juice
  • ¼ cup butter, melted, 1/2 stick

For the glaze

  • 2 cups powdered sugar
  • 1 teaspoon grated orange peel
  • 3 tablespoons orange juice

Instructions 

  • Combine the flour, baking powder and salt in a medium bowl and set aside. In a large bowl, beat eggs, sugar and vanilla until thick and lemon colored. In a small bowl, combine the orange peel, orange juice and butter.
  • Add the orange juice mixture and dry ingredients alternately to the egg mixture. Beat with electric mixer just until blended after each addition. Cover and chill dough for at least 2 hours.
  • Roll out onto a lightly floured surface to ⅜-in. thick. Cut with a floured 2½-in. doughnut cutter. Fry in oil (375°F) about one minute per side, turning once. Drain on a rack over paper towels.
  • Mix all of the glaze ingredients until well combined. Dip the tops of doughnuts into the glaze and place glaze side up on the rack to set.

Notes

  • Change all the orange to lemon for a fun option!
