I shared this recipe at Mom's Test Kitchen a few weeks ago. I wanted to go ahead and post it here for anyone who didn't get a chance to go over there and check it out. We home school, but after school snacks are still a part of our day most days. I like to serve my kids treats that are
quick and easy - and usually stuff they can prepare themselves. I don't know about your family, but our family {capital} L-O-V-E-S pizza. We eat pizza on occasion for lunch or snacks and almost every Friday night! Today, I'm sharing a super easy Tortilla Pizza recipe. It may be a recipe you've forgotten
about. Feel free to play around with the ingredients - use pesto, salsa, BBQ sauce or Alfredo sauce in
place of the pizza sauce. Use whatever meats and veggies your family prefers! Go crazy ... or keep it
simple. The choice is yours! :) Two of my favorite Tortilla Pizza's are pesto with sliced black olives, diced tomatoes,
chopped spinach and crumbled feta cheese ... or Alfredo sauce with spinach and tomatoes (sometimes I add chicken, too)! My boys prefer plain ol' pepperoni and cheese!
1 small whole-wheat tortilla
¼ cup pizza sauce
¼-⅓ cup shredded cheese
toppings of choice (I used about4-5 chopped pepperoni)
Preheat oven to 425° F. Place tortilla on an ungreased baking sheet. Top with pizza sauce, then cheese. Add whatever toppings you prefer. Place in oven and bake for 12-15 minutes or until tortilla is golden and cheese is bubbly. Slice and eat!
I hope you enjoy!
