I mentioned a few days ago that the kids here in the Phoenix area are heading back to school. Some started last week …. some go back next week … some go back the week after that … and then, there’s us. As homeschoolers, we are trying to soak up the last little bit of summer. Right now, it looks like my kiddos will be hitting the book in about mid-August(ish).
The kids have been begging me for an ice cream party and I figured we better do it before summer winds down. My kids love it because it is the only time where they kind of get permission to eat ice cream for dinner ….. and it’s not that we’re really eating ice cream for dinner – but we’re so stuffed from sprinkles, chocolate, strawberries, bananas, caramel, sugar cones, waffle cones, chocolate-dipped ones and too many scoops of ice cream to even think about dinner.
We usually make a few new flavors of ice cream to try and of course, we buy store-bought favorites as well. This year, we made this No Churn Chocolate Cake Batter Ice Cream with Chocolate Chunks …… have mercy. This stuff is so good, y’all! And easy to make too!
Having little ones inevitably means there will be drips, spills, and big messes …

{No-Churn} Chocolate Cake Batter Ice Cream with Chocolate Chunks

Ingredients
- 2 cups heavy whipping cream
- 1 can sweetened condensed milk, 14 oz.
- 1 ½ cups chocolate cake mix, reserve remaining cake mix for another use
- 1 bar Ghirardelli Intense Dark 60% Cacao Evening Dream (or similar chocolate bar), chopped, 3.5 oz.
Instructions
- Beat whipping cream with an electric mixer in a large bowl until stiff peaks form.
- Stir condensed milk and cake mix together in another bowl. Fold cake mix mixture into whipped cream. Fold in the chocolate chunks.
- Pour mixture into a freezer-safe container, cover the container, and freeze until ice cream is set, 6 hours to overnight.
Notes
- I think dark chocolate is best as it is a nice contrast to the sweet ice cream, but you can use your favorite chocolate bar here.
