I love the Alfredo/spinach combo! This is a nice change from the traditional red-sauced lasagna. Use sweet, mild or spicy Italian sausage according to your family's tastes - they all work and are equally delicious!
Italian Sausage Spinach Alfredo Lasagna
Yield: 10-12 servings
12-16 oz. lasagna noodles (you may not need them all)
1 lb. Italian sausage
1 pkg. (10 oz.) frozen chopped spinach, thawed and drained well
1 jar (16 oz.) Alfredo sauce
1 egg, beaten
2 cups (8 oz.) Cheddar cheese, shredded
1 carton (15 oz.) Ricotta cheese
1/2 cup Parmesan cheese, grated
1 cup (4 oz.) Mozzarella cheese, shredded
Preheat oven to 350° F. Spray a 13x9x2-in. baking dish with cooking spray and set aside.
Cook noodles according to package directions. Drain. Set aside.
Meanwhile, cook and crumble sausage in a skillet over medium-high heat until browned and cooked through. Drain sausage; add spinach and Alfredo sauce.
In a bowl, combine the egg, Cheddar, Ricotta and Parmesan cheeses; mix well.
Layer a third of the sausage mixture, noodles and cheese mixture. Repeat layers twice. Sprinkle with Mozzarella cheese.
Cover and bake for 45 minutes. Uncover and bake an additional 10 minutes.
Let stand 10-15 minutes before cutting. Serve hot.
