This is one of those recipes you truly can customize to make your own. If you want more veggies and less fruit (or vice-versa) ~ you can add and subtract ingredients to get the flavor and texture you want! Use what you have on hand. Want a tropical flavor? Add drained pineapple, chopped mango, shredded coconut and Macadamia nuts in place of the other ingredients! Use your imagination for endless possibilities!
Deli-Style Chicken Salad
Slightly adapted from allrecipes
Yield: 8-10 servings
½ cup mayonnaise
½ cup Miracle Whip
1 tsp. paprika
1 tsp. seasoning salt
4 cups cooked chicken, cubed or shredded
1 cup dried cranberries, dried cherries or grape halves
½ cup chopped celery
2 green onions, chopped
¾ cup chopped green pepper or apple
1 cup toasted pecans, chopped
ground black pepper, to taste
In a bowl, combine the mayonnaise, Miracle Whip, paprika and seasoning salt. Mix until well combined. Add the chicken, cranberries, celery, green onions, green pepper and pecans. Mix well. Season with pepper to taste. Chill at least 1 hour, preferably 4-6 hours, before serving. Refrigerate leftovers.
