Ingredients
3poundsboneless skinless chicken thighscut into bite-sized pieces
1largeonionchopped
3 - 4clovesgarlicminced
1tablespoonfreshly grated ginger
2tablespoonstomato paste
2tablespoonsgaram masala
1 ½teaspoonspaprika
1 ½teaspoonsground cumin
1 ½teaspoonssalt
28ouncespetite-diced tomatoes
¾cupheavy cream
Cooked Basmati ricefor serving
Fresh cilantrochopped, for garnish
Instructions
In a slow cooker, add chicken, onion, garlic, ginger, tomato paste, garam masala, paprika, cumin, salt, and tomatoes. Stir well to combine.
Cover and cook on low 6-8 hours (high for 3-4 hours), or until the chicken is cooked through.
30 minutes before serving, stir in the heavy cream, continuing to cook the remaining 30 minutes with the lid off.
Serve with cooked rice and garnish with chopped cilantro.
Notes
Serve plain yogurt on the side with the rice to cut the spice.
