Add the chips to the skillet and pour the mole over the chips.
Simmer and gently combine the ingredients to coat, for 5-7 minutes or until the chips have absorbed most of the salsa.
To serve, top with optional toppings.
Notes
To reheat leftover Mole Chilaquiles, you can heat them in a skillet on the stove over medium heat until warmed through, or microwave them in a microwave-safe dish in 30-second intervals until heated to your liking. Enjoy!
