Instructions
For the cupcakes:
Preheat oven to 350°F. Line 24 muffins cups with paper baking cup liners and set aside.
In a medium bowl, combine the cake mix, mike's hard pink lemonade®, vegetable oil, eggs, lemon zest and food coloring with an electric mixer on low speed for 2 minutes. Stop the mixer and scrapes down the sides of the bowl. Mix on medium speed for an additional 2 minutes of until well combined. Evenly divide the batter between the muffin cups.
Bake for 20-22 minutes or until a toothpick inserted near the center tests clean. Allow the cupcakes to cool in the pan for 10 minutes before transferring to a cooling rack to cool completely.
For the frosting:
Place the butter in a large mixing bowl and beat on low speed with an electric mixer until fluffy. Stop the mixer and add the powdered sugar, Duncan Hines® frosting creations pink lemonade flavor mix and 3 tbsp. mike's hard pink lemonade®. Mix on low speed until the sugar is incorporated and then increase the mixer speed to medium and beat until light and fluffy, about 1-2 minutes. If the frosting seems thick, add additional mike's hard pink lemonade® to reach the desired consistency.
To assemble:
Frost cupcakes. Top with candy lemon slice, if desired.
Notes
If you like a good amount of frosting, double the frosting portion of this recipe!
