Ingredients
16ouncespasta
a few swirls of olive oil
1mediumonionchopped
4clovesgarlicminced
1boxfrozen spinach, thawed and squeezed dry10 oz.
3Roma tomatoeschopped
½cupblack oliveshalved
½teaspoonoregano
splash of white wineoptional
Feta cheese
Instructions
Cook the pasta according to the package directions.
Meanwhile, in a large skillet, cook the onions in olive oil until soft and just starting to brown. Add the garlic, spinach, tomatoes, black olives, oregano, and wine.
Cook for 3-5 minutes or until everything is heated through. Remove from the heat.
Drain the pasta and mix it into the spinach and tomato mixture. Stir in feta.
