Ingredients
For the crust
3cupsfinely ground graham crackersabout 24 crackers
⅔cupgranulated sugar
¾cupbutter, melted1 1/2 sticks
For the cheesecake
2packagescream cheese, softened8 oz. each
⅔cupgranulated sugar
1tubfrozen whipped topping, thawed16 oz.
Topping
1 - 2canscherry pie filling - or the flavor of your choice (optional)20-21 oz. each
Instructions
In a medium bowl, combine the graham crackers, sugar, and melted butter. Press the mixture into a 9x13-inch baking dish. Chill the crust while preparing the cheesecake layer.
Beat cream cheese and sugar in a large bowl until smooth. Gently stir in the whipped topping. Spread over the prepared crust.
Refrigerate for 4 hours or until set.
When ready to serve, spoon the pie filling evenly over the top of the cheesecake or spoon it over individual portions. Store any leftovers in the refrigerator.
Notes
While it does cost more, it's also really convenient to buy a box of graham cracker crumbs! Otherwise, smash the crackers in a bag or the food processor.
