Cilantro Lime Rice

Ingredients

chicken broth or water
1
cup
long-grain white rice
2
tablespoons
fresh lime juice
more to taste
¼
cup
chopped cilantro
more to taste

teaspoon
lime zest
optional
Instructions
In a medium saucepan, bring the chicken broth and rice to a boil. Cover, reduce heat to low, and simmer until the rice is tender, about 20 minutes.
Remove the rice from the heat and fluff with a fork. Stir the lime juice, cilantro and lime zest into the cooked rice just before serving.
Notes
This is great as a side dish or used inside burritos or burrito bowls.
