Ingredients
1tablespoonHorizon Organic unsalted butter
2stalks celeryfinely chopped
1small onionfinely chopped
2carrotsfinely chopped
2clovesgarlicminced
1lb.boneless skinless chicken breastsor tenders, cooked and chopped
1lb.wide egg noodlescooked and drained
24ozsour cream
2canscream of chicken soup, undiluted10.5 oz each
1bagHorizon Organic Cheddar cheese, shredded6 oz.
1bagHorizon Organic Mozzarella cheese, shredded6 oz.
1cupHorizon Organic Cheddar Snack Crackerscrushed
¼cupHorizon Organic unsalted buttermelted
Instructions
Preheat oven to 350°F. Lightly grease a 9x13-inch baking dish and set aside.
Meanwhile, in a large skillet, saute the celery, onion and carrots in 1 tablespoon of butter for 3 minutes. Add the garlic and cook and additional 2 minutes. Remove from heat.
In a large bowl, combine the vegetable mixture along with the chopped chicken, cooked noodles, sour cream, soups, Cheddar cheese and Mozzarella cheese. Mix until well combined. Pour the mixture into the prepared baking dish.
In a small bowl, combine the cracker crumbs and butter. Sprinkle the cracker crumbs over the top of the casserole.
Bake for 30 minutes or until the crackers are crispy, and the cheese is melted.
Notes
If you have a favorite homemade soup recipe, feel free to use that instead of the cans.
Out of cheese crackers? Plain/buttery crackers work just as well.
