Cook the bacon in a large skillet over medium heat until it reaches the desired doneness. Remove the bacon to a paper towel-lined plate. Drain and reserve about 2 tablespoons of the bacon grease in the skillet. Cool and discard the remaining bacon grease or save it for future use, if desired. Once the bacon has cooled, crumble or chop into pieces.
Cook the onions in the reserved bacon grease over medium-high heat until the onions begin to turn brown. Remove the onions from the skillet and set them aside.
In the same skillet, cook and crumble the ground beef with salt and pepper until the beef is no longer pink.
Add the rice, ketchup, mustard, cheese, onions, and bacon to the skillet. Cook and stir until all of the ingredients are well coated and heated through.
Remove the skillet from the heat and mix in the lettuce and tomatoes.
Serve individual portions with a sprinkle of sesame seeds, a drizzle of Big Mac sauce, and pickles on top.
Notes
It is important that your rice is cold when making fried rice. Use leftover rice or make it earlier in the day or even the night before so it has plenty of time to cool completely.
If you prefer, you can top your Cheeseburger Fried Rice with lettuce and tomato instead of mixing it in. This is especially a great idea if you plan on having any leftovers.
