Ingredients
6boneless skinless chicken breast halves
Olive oil
Salt & pepperto taste
½cupBBQ sauce
½cupMonterey Jack cheeseshredded
½cupCheddar cheeseshredded
6slicesbaconcooked and chopped
2roma tomatoesseeded and chopped
3green onionschopped
Instructions
Preheat oven to 450°F.
Place chicken breasts in a single layer in a large baking dish. Brush both sides of each chicken breast evenly with olive oil. Season with salt and pepper.
Bake for 10 minutes.
Remove the chicken from the oven and brush the tops and sides of each chicken breast evenly with BBQ Sauce. Return the chicken to the oven for 5 minutes.
Remove the chicken from the oven and sprinkle both kinds of cheese evenly over the top of the chicken breasts. Evenly sprinkle the bacon over the top. Return the chicken to the oven for 3-5 minutes or until the cheese is melted and the chicken is no longer pink.
Remove the chicken from the oven and evenly top with tomatoes and green onions. Loosely cover the baking dish with aluminum foil and let the chicken rest for 5 minutes before serving.
