Gingerbread Men
Is it just me, or is this the busiest time of year?! I have about a thousand things I’m working on … mostly, I feel like I’m just spinning my wheels without going anywhere! This time of year, I like to keep our menu more simple with lots of comfort food and plenty of quick dinner ideas. I figure most days. The day has been hectic enough. One thing I don’t skimp on is holiday baking.

Often, holiday baking includes my children. They love to help prepare (and eat!) all of the goodies we crank out! My kiddos especially love to help me make and decorate these Chocolate Gingerbread Man Cookies! With just a hint of chocolate and plenty of gingery spice, these cookies are sure to be a hit on any holiday cookie tray!

Gingerbread Men Recipe
- unsalted butter
- molasses
- semi-sweet baking chocolate
- all-purpose flour
- granulated sugar
- baking powder
- ground ginger
- baking soda
- salt
- milk
- decorator icing
- assorted candies & sprinkles

How to make Chocolate Gingerbread Men
Time needed: 1 hour.
How to make Chocolate Gingerbread Men
- Melt.
In the top of a double boiler, combine the butter, molasses, and chocolate squares. Heat until the chocolate melts, stirring until smooth.
- Prepare cookie dough.
In a medium bowl, sift together the flour, sugar, baking powder, ginger, baking soda, and salt. Stir in the molasses mixture and milk. Mix well. Cover and refrigerate at least one hour or until firm.
- Preheat oven.
Preheat oven to 375°F.
- Cut out cookies.
Turn the dough out onto a lightly floured surface. With a rolling pin, roll the dough to ¼-inch thick. Dip a gingerbread man cookie cutter into flour and cut the dough into shapes. Place the cookie cut-outs on Sil-pat or parchment paper-lined baking sheets.
- Bake and cool.
Bake for 10 minutes. Allow cookies to cool on the pan for 3 minutes before transferring to wire racks to cool completely.
- Decorate.
Decorate with icing and candies as desired.
