Instructions
In a medium bowl, combine the Greek yogurt, chia seeds, cooled coffee, maple syrup, vanilla extract, cinnamon, and sea salt.
¾ cup unsweetened plain Greek yogurt, 2 tablespoons chia seeds, ½ cup strong brewed coffee, 1 tablespoon maple syrup, ½ teaspoon vanilla extract, ¼ teaspoon ground cinnamon, Pinch of sea salt
Stir continuously for about 1 minute until the chia seeds are evenly distributed.
Cover and refrigerate for at least 4 hours, or overnight, until thick and creamy.
Stir well once more after chilling.
Divide into serving glasses or jars.
If desired, add a layer of plain or lightly sweetened Greek yogurt on top to mimic the creamy mascarpone layer found in traditional tiramisu.
