Ingredients
For the cookies
1 ½cupsunsalted buttersoftened
2cupsgranulated sugar
4eggs
1teaspoonvanilla extract
5cupsall-purpose flour
2teaspoonsbaking powder
1teaspoonsalt
For the royal icing
4egg whites
4cupssifted powdered sugar
1teaspoonlemon extractyou can substitute any clear extract
Instructions
For the cookies:
In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
Preheat oven to 400°F. Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into rectangle shapes with a cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
Bake 6 to 8 minutes in preheated oven. Cool completely.
For the royal icing:
Beat egg whites in clean, large bowl with mixer at high speed until foamy (use only grade A clean, uncracked eggs). Gradually add sugar and lemon extract. Beat at high speed until thickened.
To assemble the cookies:
Tint half of the royal icing black. Place the black icing in a piping bag.
With the black icing, outline the rectangles. Carefully outline the keys using the pictures in this post as a guideline.
Place the white icing in a piping bag. Fill the keys in, using a toothpick to spread icing into corners, if necessary.
