Instructions
Place the shot cups on a small baking sheet. Set aside.
Add the pineapple juice and orange juice to a medium mixing bowl. Sprinkle the gelatin over the top and let it dissolve into the juices.
Once the gelatin has dissolved and lost its powdery look, add the boiling water and stir until the gelatin has dissolved.
Add the rum, lime juice, and grenadine and stir again.
Fill each shot cup until it’s about three-quarters of the way full.
Transfer the baking sheet with the jello shots to the freezer and chill for 2 hours or until the jello shots are set.
If desired, top the jello shots with whipped cream and a pineapple chunk before serving.
Notes
You can also add orange chunks, maraschino cherries, or lime chunks as a garnish as well.
Do not add the garnishes if you do not plan on serving them within the next couple of hours. You can’t put the lids on top of them if you’ve added the garnishes, and the garnishes will get gross sitting out in the open inside the fridge.
These shots will keep in the fridge for up to 2 weeks. Do not freeze them.
Do NOT add the gelatin to hot water first. It will make it stringy and chunky. You can still use it if you make this mistake. However, you’ll need to use a spoon to scoop out the random chunks that are left behind. Unflavored gelatin doesn’t work the same as flavored jello.
You may need to slightly stir the mixture once you add the gelatin as the powder might not fully sink into the liquid. Just be gentle about it.
