In a mixing bowl, combine the softened cream cheese, horseradish, and Dijon mustard using an electric hand mixer until well combined.
Top each RITZ® cracker with the cream cheese mixture.
Add a portion of chopped roast beef to each cracker.
If desired, sprinkle with chopped parsley or dill weed for garnish.
Serve immediately as a delicious party appetizer or quick snack.
Notes
While it's best to serve them immediately to maintain the crispness of the crackers, you can prepare the cream cheese mixture and roast beef in advance and assemble the crackers just before serving to save time. Keep the cream cheese and roast beef refrigerated until needed. Allow the cream cheese to soften before use. Do not top the crackers until right before serving time to keep them crisp!
Leftovers, if any, can be stored in an airtight container in the refrigerator. However, keep in mind that the crackers may lose some of their crispness over time.
The amount of horseradish you add can be adjusted to suit your taste. If you prefer a milder flavor, use less horseradish, and if you like it spicier, you can add a bit more.
