Place the whole milk, half and half, white chocolate chips, pumpkin puree, brown sugar, pumpkin pie spice, cinnamon, and allspice in a large pot or dutch oven over medium-low heat. Whisk all of the ingredients together.
Continue to heat and whisk mixture frequently until the chocolate is completely melted and the hot chocolate is warmed to your liking, about 15-20 minutes.
Pour into cups and serve with whipped cream and a sprinkle of pumpkin pie spice.
Notes
The milk mixture should not come to a boil. The goal is to warm the chocolate and milk slowly for the best texture and consistency.
Make sure to use a whisk to help break down the chocolate. You should be left with a nice creamy texture. If the hot chocolate still has chunks of chocolate in it, it still needs to be heated.
