Ingredients
1ouncemint simple syrup
4large fresh mint leaves
1 ½ounceBlanco rum
2ouncetonic water
3ouncepineapple juice
2 - 3pineapple chunks for garnish
Fresh sprig of mint for garnish

Instructions
To make the cocktail add four (4) large mint leaves and the mint simple syrup into the bottom of the glass, muddle the mint leaves with a standard muddler, pressing with downward and twisting turns to release the oil from the mint leaves. Once this is finished add the Blanco rum and pineapple juice.
Using a long-handled bar spoon vigorously mix the ingredients for thirty (30) seconds. Now add the ice until the glass with halfway filled with ice, top with tonic water, and serve.

To make this a non-alcoholic Pineapple "Nojito" - substitute lemon-lime soda (such as Sprite, 7Up, etc.) or chilled grape juice in place of the rum.
