I know I've said this before, but I am not a breakfast person. When I do eat breakfast, I want something small and quick - healthy is good, too! :) These muffins are great! My favorite part is the oozy peanut butter! I have to restrain myself from adding some sort of chocolate ... because chocolate just seems to make sense on this little muffin. Sometimes I add a dab of strawberry jelly ... or a slice of bacon! A sprinkle of cinnamon is good option, too! My kiddos love these muffins for breakfast or for a quick snack.

Ingredients
1English muffin
Peanut Butter
1small banana
Brown sugar or honeyoptional
Cinnamonoptional
Instructions
Set oven to broil and move rack to the highest position. Split English muffin in half. Toast to your liking. Spread with peanut butter. Top with banana slices. Add brown sugar or honey to the top, if desired. Sprinkle with cinnamon, if using.
Place English muffins on a baking sheet and place in oven. Broil until top begins to brown or until it is as done as you like - watch carefully so it doesn't burn.
Notes
This is also good with a slice of cooked bacon, cut in half, layered on top of the peanut butter and under the bananas ... or a dab or strawberry preserves!
