These Oatmeal Pancakes are a nice change from the standard pancakes. They are very hearty and filling! Add your favorite fruit if you like.

Ingredients
1cupwhole wheat flour
1cupquick-cooking oatmeal
2tablespoonsbrown sugar
1teaspooncinnamon
2teaspoonsbaking powder
½teaspoonsalt
1 ½cupsbuttermilk
2teaspoonsvanilla extract
4tablespoonsapplesauce or vegetable oil
2largeegg
Instructions
Place all ingredients in a bowl and stir until smooth. (The batter will be thin).
Heat a lightly oiled griddle over medium heat. When the griddle is hot, pour the batter onto the griddle, using approximately 1/4 cup for each pancake. When bubbles start to form and the edges look dry, flip and cook another 2-3 minutes, or until completely cooked through.
Serve hot with your favorite maple syrup!
Notes
I find using a soup ladle much easier in the pancake making process. I use a scant scoopful and it makes the perfect-sized pancakes in my opinion! It also helps prevent the drips down the side of the bowl!
