Instructions
In a small saucepan, combine the reserved pineapple juice, water, and lime Jello powder. Cook and stir over low heat until the gelatin is dissolved. Refrigerate the mixture until it is syrupy and just barely beginning to set, about 30 to 35 minutes.
In a large mixing bowl, beat the cream cheese with an electric mixer until fluffy. Pour in the gelatin mixture and beat until just combined. Stir in the pineapple and marshmallows.
In a separate medium bowl, beat the whipping cream with sugar until soft peaks form. Gently fold the whipped cream mixture into the gelatin-cream cheese mixture.
Cover and refrigerate for at least 2 hours (or overnight), until set.
