Instructions
Preheat the oven to 375°F. Line a baking sheet with parchment paper or lightly coat it with nonstick cooking spray.
In the bowl of a stand mixer or with a hand mixer, combine the sugar cookie mix, butter, and egg. Mix on low speed for 1 to 2 minutes, or until combined.

Add the sour cream and vanilla extract. Mix until a smooth dough forms.

Scoop the dough onto the prepared baking sheet using a cookie scoop, ice cream scoop, or spoon, spacing the cookies about 2 inches apart.
Bake for 10 to 12 minutes, or until the edges are set and the tops are lightly golden.
Transfer the cookies to a wire rack and cool for 10 to 15 minutes.
Meanwhile, prepare the frosting by beating together the cream cheese and butter until smooth.

Mix in the vanilla extract.

With the mixer on low speed, gradually add the powdered sugar, one cup at a time, until the frosting reaches your desired consistency.

Store leftover cookies in an airtight container in the refrigerator for 2 to 3 days.
If stacking cookies, place parchment or wax paper between the layers.
