Ingredients
For the pasta salad
1lb.rotini pasta
1canRo*Tel Diced Tomatoes with Green Chilies, drained10 oz.
1canblack beans, rinsed and drained16 oz.
1bagfrozen corn, thawed and drained12 oz.
½cupcilantrochopped
½cupred onionfinely chopped
For the dressing
1cupmayonnaise
½cupsour cream
2chilies in adobouse more or less, to taste
Juice of 1 lime
Salt and pepperto taste
Instructions
Cook pasta according to package directions. Drain. Rinse with cold water and drain completely. Transfer pasta to a large bowl.
To the pasta, add Ro*Tel, black beans, corn, cilantro and red onion. Set aside.
In a food processor bowl, add all of the dressing ingredients. Cover and process until well combined and smooth.
Add the dressing to the pasta mixture. Gently toss to coat. Refrigerate at least one hour or overnight before serving.
Notes
Eat as a light meal on its own or serve with chicken or burgers.
