Ingredients
1 ½cupsbrown riceuncooked
2cupsromaine lettucechopped
1canblack beans15.25 oz can
1cansweet whole kernel corn15.25 oz
1largetomatodiced
Light Tomatillo Dressing
2cupsgreek yogurt
¼bunch cilantrocleaned and pulled from stems
1tomatillocut into chunks and paper skin removed
¼teaspoonminced garlic
½jalapenoseeds removed
juice of 1 lime
½teaspoonsalt
1green onionall of the green part
Instructions
Cook rice according to package directions. Place rice in bowls and top with lettuce, beans, corn, and tomato.
Prepare the dressing by combining all ingredients in a blender. Drizzle over burrito bowls and serve.
