Grease an 8x8-inch pan with nonstick spray and line the pan with parchment paper. Set aside.
Melt the butter in a medium saucepan over medium heat.
Reduce the heat to low and stir in the marshmallows and maple syrup. Continue to stir until all the marshmallows are melted.
Remove the pan from the heat and add the rice cereal and chow mein noodles. Mix until well combined.
Fold one cup of M&M's and half the Pop-tarts into the rice crispy mixture.
Place the Rice Krispies into the prepared pan and spread it into an even layer.
Pour the chocolate into a zip-top bag and, cut off the corner, drizzle the chocolate over the Rice Krispies. Sprinkle the remaining M&Ms, pop tarts, and colored marshmallows over the top and gently press to help them stick.
Allow the treats to cool for an hour before slicing.
Notes
You can easily double or even triple the recipe to serve a larger group of people. Just be sure to have a larger pan and adjust the quantities of ingredients accordingly.
When stored in an airtight container at room temperature, Buddy the Elf Rice Crispy Treats can stay fresh for up to 3-4 days. If you want to extend their freshness, you can refrigerate them, but they may become slightly firmer.
