Instructions
Heat a griddle or a skillet on the stove over medium heat.
In a shallow dish, whisk together the eggs, half and half, brown sugar, vanilla extract, and one teaspoon of cinnamon.
Add a tablespoon of butter to the skillet or griddle and spread out.
Dip each side of the Brioche bread into the mixture to even coat it. When coating the bread in the wet mixture, avoid over-soaking it and only soak it for a few seconds. Be sure to let any excess mixture drip off.
Place the bread onto the griddle or skillet and cook until golden brown on both sides, flipping once. Sprinkle additional cinnamon onto the bread while cooking (this is optional but helps ensure each side has a bit of cinnamon on it). If necessary, repeat the process of soaking the bread in the wet mixture and adding to the skillet with butter until all of the bread is cooked.
Serve immediately with maple syrup, a dusting of powdered sugar, and/or fresh berries.
Notes
Leftover Brioche French Toast can be stored in an airtight container in the refrigerator for up to three days. Reheat it in an air fryer or toaster for a few minutes to enjoy it again.
You can freeze Brioche French Toast. Allow it to cool completely, then wrap it tightly in plastic wrap or aluminum foil and store it in a freezer-safe container or bag for up to a month. Reheat it in the toaster or oven when you're ready to enjoy it again.
