Ingredients

for double crust (homemade or store bought)

demerara sugar or turbinado sugar
Instructions
Preheat oven to 375°F.
Peel, core, and slice apples. Place in a large bowl.
Squeeze lemon juice over apples and toss to coat.
Add granulated sugar, brown sugar, flour, cinnamon, cardamom, ginger, nutmeg, and salt. Stir to combine.
Roll out bottom pie dough to 12 inches and press into pie pan. Trim excess.
Fill crust with apple mixture, leveling evenly (you may not need all apples depending on pan depth).
Sprinkle butter cubes over apples.
Roll out top pie dough to 12 inches. Cut into ½-inch strips (about 14 total). Create a lattice top by weaving strips over pie, pressing edges to seal.
Whisk egg and brush over lattice. Sprinkle with demerara sugar.
Bake uncovered for 30 minutes. Cover with foil and bake another 30 minutes, or until pie reaches 195°F internally.
Cool on a baking rack at least 2 hours before serving.
Serve with ice cream or caramel sauce if desired.

Cover and store at room temperature up to 2 days.
Refrigerate up to 5 days.
♨️ REHEATING
Microwave slices for 30-45 seconds.
Reheat in a 350°F oven for 10-15 minutes.
Warm in an air fryer at 325°F for 4-6 minutes.
Heat in a skillet over low heat with a lid for 5 minutes.

Freeze baked pie, wrapped tightly, for up to 3 months.
Thaw overnight in the refrigerator and reheat before serving.

Use a mix of sweet and tart apples for balanced flavor.
Let the pie cool fully so the filling sets.
Brush lattice with egg wash for golden shine.
Cover edges with foil if browning too quickly.
🍳 ALTERNATE COOKING METHODS
Air fryer:
Bake at 325°F for 25-30 minutes, covering top with foil halfway.
Stovetop (skillet pie):
Cook filling fully on the stove, then top with crust and cook covered until crust is golden.
Broiler finish:
Use the broiler for 1-2 minutes at the end for extra crisp topping.
