Take a fork and poke a few holes into the potatoes.
Place the potatoes on a plate.
Drizzle the oil over to coat.
Sprinkle the potatoes with salt and onion powder over the top. Gently rub the potatoes to coat them with the oil and seasonings.
Place the potatoes in the air fryer basket.
Close the air fryer and air fry for 40 minutes or until you can insert a fork easily, or if you have a thermometer, the internal temperature is 200-205°F.
Let the potatoes cool for a few minutes before slicing lengthwise and serving.
If desired, serve and enjoy with your favorite topping.
Notes
Depending on your air fryer, time and temperature may need to be adjusted.
Allow the leftover baked potatoes to cool completely at room temperature. Once cooled, transfer them to an airtight container or resealable plastic bag. Store the potatoes in the refrigerator for up to 3 days.
When ready to reheat, preheat your air fryer to 350°F. Place the leftover baked potatoes in the air fryer basket in a single layer, making sure they are not overcrowded. Reheat the potatoes in the air fryer for 6 to 8 minutes or until heated through. If desired, you can brush the potatoes with a little olive oil or melted butter before reheating to help crisp up the skins. Once reheated, carefully remove the potatoes from the air fryer and serve hot with your favorite toppings.
