Slow Cooker Split Pea Soup
This delicious and healthy Slow Cooker Split Pea Soup is a cinch to put together. Serve it with a crusty bread for an easy, affordable meal.
Ingredients

lb. dry split peas, rinsed and drained

meaty ham bone OR 2 cups ham, diced

1
large onions, chopped

3
cloves garlic, minced
-
2
carrots, chopped
-
2
stalks celery, chopped
-
1
bay leaf
-
Salt and pepper, to taste

6-8
cups chicken stock or water
Instructions
- Place all of the ingredients in a 5-Qt. or larger slow cooker. Cover and cook on LOW for 8-10 hours or HIGH for 4-5 hours, or until the peas are tender.
- If using a ham bone, remove from the slow cooker. Shred ham into bite-size pieces then return the ham to the slow cooker and stir to combine. Discard the bone.
- Taste and season with more salt and pepper, as needed.
- Remove the bay leaf and serve.
