Simple Southwest Chicken & Rice Soup

You can throw this Simple Southwest Chicken & Rice Soup together in no time! Light, easy and delicious!


  • 1 1/2 cup rice
  • 4 cups chicken stock
  • 2 cups cooked chicken, chopped
  • 1 can (10 oz.) Ro*Tel Diced Tomatoes with Green Chilies
  • 1 can (4 oz.) chopped green chilies
  • Cilantro, chopped
  • Lime wedges, for serving


  1. Bring 3 cups of water to a boil. Add rice. Stir once, or just enough to separate the rice. Cover the pot with a tight-fitting lid and simmer for 20 minutes, or until the water is absorbed. Fluff rice with a fork.
  2. Meanwhile, bring the chicken stock, chicken, Ro*tel, and green chilies to a simmer in a large saucepan or soup pot over medium heat. Cook until all ingredients are heated through.

To serve:

Add a scoop of rice to the bottom of a bowl. Ladle the chicken stock mixture over the top. Sprinkle with cilantro. Serve with a lime wedge to be squeezed into the soup.
