Fiesta Lime Shrimp Salad

A hearty, delicious, green spinach salad packed with flavor, antioxidants, vitamins, minerals, and other nutrients. This is the kind of salad that will have you coming back for seconds with a smile on your face.



  • 1 lime juiced
  • 1 T honey
  • 1/4 tsp sriracha (more if desired)
  • 1/4 cup olive oil
  • 1 Tbs chopped cilantro
  • 1/2 Tbs red onion


  • 2 sweet mini peppers, sliced
  • 1/2 cup chopped red onion
  • 1/2 cup pomegranate arils
  • 1/2 cup persimmon, chopped
  • 1/2 cup fresh pineapple, chopped
  • 1/3 cup corn kernels
  • 1/4 cup chopped cilantro
  • 1/2 avocado, sliced and diced
  • 4 cups baby spinach
  • 2 cups baby kale
  • 1 recipe of Spicy Honey Lime Shrimp


  1. Put all dressing ingredients in a blender and blend until smooth, taste and adjust flavor according to preference.
  2. Prepare shrimp according to directions in the recipe.
  3. Wash and chop all salad ingredients.
  4. Assemble and enjoy
