Loaded Tater Tot Casserole

Is it casserole season yet? We're heading into September and the temperatures are still warm here in Phoenix, but that doesn't stop me from enjoying a yummy casserole every now and then. Many of y'all are familiar with tater tot casserole - ya know the one with ground beef ... but this Loaded Tater Tot Casserole is full of bacon, chicken, cheese and scrumptious from-scratch chicken gravy!

I got this idea from my bloggy friend, Sheena over at Hot Eats and Cool Reads. I immediately knew my family would LOVE this. The only thing I did different to the recipe was to add the gravy - because who doesn't love gravy?! ;) If you're pressed for time, you could substitute jarred gravy if you would like - or you can even omit it completely like Sheena did.

Sticky Asian Glazed Meatballs

Have mercy, y'all ... this is one of those meals you really need to give it a try! I cannot say enough about how great this was and how much I really loved this! It was so good, that we had it twice in one week! My entire family enjoyed this one - a lot - and I'm already thinking about making it again .... I know what you're thinking .... and no, I don't think I could have this too many times!

We kept this meal simple with just the glazed meatballs, rice and stir-fried veggies. This meal comes together fairly quickly - so it's perfect for busy nights. Start your rice first ... get the meatballs going ... stir-fry some veggies - and then sit back and savor every delicious bite. You'll be glad you made this - and your family might just think you're a rock star mom or dad with this dish!

Easy Tuna Mac n' Cheese

I don't know about y'all .... but sometimes, I need quick meals. It's really not optional. Saying that our life is busy, is an understatement. I'm sure many of y'all have a similar sort of "chaos" at your house! :) I personally don't think there's anything wrong with taking shortcuts every now and then- and this Easy Tuna Mac n' Cheese is one of those meals that I turn to when time is short.

This dinner idea gets a quick start with the blue box Mac n' Cheese - ya know the stuff that most kids love! Add some canned tuna, peas and a little extra Cheddar cheese and you've got yourself a kid-approved meal. And the best thing?! It uses things you probably already have in your pantry and fridge!

Easy No-Bake Cheesecake

Do you have a particular recipe that everyone seems to want once they try it? This Easy No-Bake Cheesecake is one of those recipes for me. I can't count the number of times I have given this particular recipe out - even my own gramma wanted it!

Although I love traditional cheesecake, sometimes I love the no-bake version even more. :) I love that it's quick and easy .... sure, it's not exactly "cheesecake," but it is good none-the-less! Personally, I like a good crumb to cheesecake ratio - but if you prefer less, feel free to adjust it to your preference. You can also easily halve the "cheesecake" portion of this recipe and use a pre-made graham cracker crust to make the even faster or to feed a smaller crowd.

Piña Colada Poke Cake

Houston, we have a problem. Ok, maybe not a "problem" problem ... just an extreme obsession kinda problem - involving poke cakes. How many poke cakes does this Piña Colada poke Cake make - the third or fourth one (who's counting anyways)? That's not even counting the Strawberry Poke Cake I made and didn't post because I felt something was missing from it - I'm still trying to figure that one out.

My oldest son, Elijah, turned 17 earlier this month and he wanted a Piña Colada cake for his birthday. Sounds easy enough, right? I totally talked him into the poke cake part. Are ya surprised there? I didn't think so. :)

I'm just gonna come out tell y'all - this may be better than the Death By Chocolate Poke Cake! I know what you're thinking - I couldn't believe I said that either. This cake is seriously that good! You have been warned and you are welcome.

Loco Moco

What's with this, Loco Moco? Nope, I've never been to Hawaii - although it is on my list of place to travel some day. I grew up in a very culturally-diverse community - Jacksonville, Florida to be exact. Being a Navy brat, it seemed like I was always exposed to so many different foods, religions, customs, holidays, languages ... you name it. I am actually very grateful that I was exposed to so many different kinds of people from such a young age. I never really thought anything of it, until I realized that not everyone had that same experience or exposure that I had. 

I was fortunate enough to have a really great bunch of friends in high school - and was blessed enough to get to try things from their cultures, that I never would have had at home. Loco Moco being one of those dishes! Some of my Filipino friends even had their own take on this classic Hawaiian dish!

Loco Moco is a really simple dish. Although there are probably many variations - traditionally, it consists of steamed white rice, a hamburger patty, a sunny-side up egg and lots of brown gravy! I've also had a Spam version of this dish - which I kinda dig too! Personally, I don't do runny eggs, so I make sure mine is cooked all the way through by using a fried egg - but you could certainly cook your eggs how you like them!

Better Mobile Is Here with Zact

As a parent, I am very protective of my children. One of the main reasons why Brian and I haven't allowed them to have smartphones is because we have always felt there was never much, if any, control over what they could do or see using a smart device. How many of y'all remember watching the Smurfs when you were growing up? More than likely, if you were a kid during the 80's, you remember the show quite well. Back then, we waited all week for cartoons because they were only on on Saturday mornings - How many of y'all remember those days?! There was something so intriguing about those little blue people, wasn't there? Who was your favorite Smurf? Papa Smurf, Smurfette, Vanity, Grouchy .... maybe you liked Gargamel and Azrael? Papa Smurf was probably my favorite!

So ..... I had my first experience with "Facebook Jail" this week. So not fun and it kinda defeats the purpose of "social" media in my opinion. I was told I had a 2 day posting ban but I appealed it - and was able to post before my 2 days were technically up. Thankfully, I have some really awesome friends who saw some humor in the situation and they gave me a smile - like this picture from my friend Joy over at Yesterfood ..... or like my blogging buddy Evelyn from My Turn For Us (who used to be a law enforcement officer, btw) - she brought me a file to saw through those bars! :) Kathe with an E came by with a "Get Out of Jail, Free Card." Many others brought over food to bribe the guards with or baked goods with shanks and files baked in them! LOL :D I'm so glad they stopped by to cheer me up! Note to self, you can be social on social media - just not too social!

Strawberry Peach Smoothie

Are you a smoothie fan? As weird as it probably sounds, I run in streaks .... sometimes, I have them every single day ... and other times, I won't have one for months. This Strawberry Peach Smoothie was the first one I've had in probably 2 or 3 months - I don't know how I went almost all summer without one?!

My local grocery store had peaches on sale for .69/lb last week and strawberries were .99/lb. They also had grapes for .85/lb. and plums for .69/lb. Needless to say, I got a bunch of fruit! I have noticed the prices of produce here in Arizona is a lot nicer than when we lived in North Carolina .... the milk prices are better here, too! However, I think we pay more for meat and some of the general grocery stuff than we did on the East coast. I'm sure it all evens out in the end though, right? How are your produce prices faring this time of year?

Do you ever have those moments when you want something, but you're not sure what you want? (It happens to me all the time!!) My 12 year old suggested making smoothies the other day and I thought it sounded great - and we had plenty of fruit to make them with, so why not?!

You can make this with fresh fruit or if you're like me, you can freeze some of the fruit ahead of time. The choice is yours - either way is delicious!

Denver Omelet Scramble

I'm not really a fan of breakfast or breakfast for dinner, but my family loves it. Really, the only "breakfast food" I truly enjoy is Biscuits with Sausage Gravy. We don't have that too often, though. Sometimes, I do give in and we do have breakfast for dinner. (Did you know that most breakfast meals are super budget-friendly, too?!) Although my family enjoys traditional omelets, it's a real pain in the neck to make seven of them! One of my solutions is to make Ziplock Omelets - everyone can add what they like and I can make them ALL at the same time - and no one gets cold food! Another thing I like to do, is to make our favorite omelets in to "scrambles" ..... same theory as the omelet - all the yummy mix-in's are still there, just in a scrambled form! :)

Of course, this version is a spin off of the popular Denver Omelet with ham, onions, green peppers and mushrooms .... but really, you could make them with anything your family likes in omelets! Enjoy!

Gutter Dogs

I know what you're thinking .... "what the heck is a gutter dog?" That my friends, is a good question! I really had no idea what to call this creation ... For some reason, it reminds me of bar food - although I'm not really sure what they serve in bars besides alcohol?! I really have no idea?! I wasn't in a bar when I made these - so I guess that theory doesn't really work?!

Maybe it's just the fact that I have a terrible time naming things - well, except my children - they have normal names (all from the Bible). When I was a kid, our pets had to have been confused .... we had a bird that I called a heifer .... a dog that I called cricket .... and as an adult, a dog named moose. Don't ever ask me to name animals --- they will be species confused. That is almost a guarantee. Naming kids - I think I'm ok .... food, that's iffy. You may wind up with something like "gutter" in the title. 

These Gutter Dogs are wrapped in bacon and grilled. Then, they're topped off with sauteed onions, peppers and garlic. And because they're gutter dogs, we have to add a mixture of condiments like ketchup, mustard and mayo. The name "Gutter Dogs" makes sense now, right? (Just nod in agreement) :) 

Maybe you have a way cooler name - Feel free to leave some suggestions on what you would have called them in the comments! I'd love to hear what kinds of stuff y'all come up with! :)

Southwest Bubble Bake

Have y'all ever hear of a "bubble bake" before? For those of you who may not have, it's basically biscuits topped with any assortment of ingredients and then baked. To me, it's is similar to a deep dish pizza - kinda. Since my family enjoys Mexican and Southwest inspired food, I decided to make a Southwest Bubble Bake - it's super duper easy and it's oooh, so good. The kids went back to school this week (yay for schedules and structure again!) ... I received TWO very lovely emails from two different Love Bakes Good Cakes readers that just totally made my week and then, to top it all off, I am officially a Brand Ambassador for Immaculate Baking!! I don't think my smile could be much bigger! :) This has been a great week!

BBQ Pork on Homemade Onion Rolls

Summer is winding down. Although it saddens me a little, I am looking forward to the cooler weather. My kiddos started back to school today - a sure reminder that Fall is right around the corner. With back to school and the anticipation of Fall, I like to rely on my slow cooker to help me get dinner on the table. These BBQ Pork on Homemade Onion Rolls will really hit the spot!

Not only do I love my slow cooker, but I love my bread machine too! (I don't have one of those fancy Kitchen-Aid stand mixers - YET). This recipe for Homemade Onion Rolls could easily be adapted to use a stand mixer - or you could even do it by hand! These rolls pair nicely with the BBQ pork. They really are simple to make and they are totally worth the effort!

In my (totally unprofessional, Southern) opinion, coleslaw is a must with BBQ Pork. Sometimes, I like it on the sandwich and other times, I'm content with it on the side. Enjoy it how you like it best! Corn on the cob and baked beans would be great accompaniments as well! Enjoy! :)

Summer Peaches with Caramel & Pound Cake

What's your favorite summer fruit? Mine is definitely peaches! I love them and look forward to them all year! Growing up in Northern Florida, meant fresh Georgia peaches were always close in the summertime! 

I haven't been doing the Lady Behind the Curtain dessert challenges lately. I have had too many other things going on and I kept forgetting about it until it was too late .... but not this month! I told my bloggy friend, Linda from With A Blast, that I would be back this month - and since the theme was Peaches and Cream, I knew I had to be back and take part in this challenge! ;)

I wanted to keep this dessert fairly easy - and quick! Most of y'all know that I'm not about being complicated. You can have dessert in about 15 minutes with this recipe!

Italian-Style Meatloaf

Meatloaf is one of those foods that either people love it or they hate it - there doesn't seem to be much middle ground. Me? I like it occasionally and luckily, so does my family! My family especially enjoyed this Italian-Style Meatloaf.

I grew up eating just the regular ol' classic meatloaf with the ketchup on top - I'm guessing many of y'all did, too? While there's nothing wrong with it - and I'm quite fond of it (surprisingly, I don't have a recipe on my blog for it - yet!!), I tend to like a funkier version. My husband would tell you the foodie in me won't make the same dish twice - I think that's a little exaggerated - it just may be a long time until we have something "the same" again. Personally, I love playing with recipes and finding ways to make old recipes "new" again. I'm thinking Brian should be used to my "science experiments" by now. ;) 

If you're a fan of meatloaf (the food, not the singer - although I kinda dig his music too), add this Italian-Style Meatloaf to your list of things to try. It's a nice combination of things that are familiar, mixed up with a unique twist. You and your family will be glad you did! :)

Ham and Pineapple Fried Rice

Can y'all believe that we're already almost a week into August? School starts this week here in Arizona, too. Is it just me or did this summer fly by? Although we homeschool, we keep a very similar schedule as the public schools. 

With school literally days away, I need quick and easy meal ideas - and maybe you do too? One of our favorite meals is Fried Rice ... and we probably have 15 different variations! (You can see some of them below!) This Ham and Pineapple Fried Rice fits the bill in ease and taste - and is a family favorite!

Are y'all ready for Back to School? Truthfully, I am more than ready! I made some some {FREE} First Day of School printables to share. They are great for kids to hold on the first day of school so you can take a picture to show how they "grew" through the years!
