Hawaiian Dogs

I'm not much of a hot dog eater - but having young children pretty much obligates me to make them on occasion. I don't really do boring dogs at our house .... I like to come up different kinds of toppings to make them fun and more tolerable for me (although my kiddos are quite content with just the regular ol' ketchup and mustard!). I love the idea of having a sweet, spicy and salty combo - so I came up with these Hawaiian Dogs.

If I were a betting person, I'd bet they don't necessarily eat stuff like this in Hawaii .... but just go with me here - mmmkay?! 

The dogs are wrapped up in bacon and grilled (carefully - you'll wanna watch those flames with the bacon grease!) - and then they are topped off with a spicy pineapple salsa. Mayo or BBQ sauce would be good condiments to add if you're so inclined - although, they're just as good without it! ;)

I don't know about your family, but Italian food and pasta, ranks pretty high on my family's list of favorite foods. Brian would probably say it is his favorite! Although we could eat our fair share of spaghetti or lasagna or baked ziti or whatever, sometimes, I like something just a little bit different. This Pork & Zucchini Pasta Ragu is a quick and simple family meal that's sure to please! 

I know I'm a little late getting this post out today .... it's been one of "those" weeks. Nothing seems to be going right, there's a hundred million things to do and never enough time - don't ya hate days like that?!

School will be starting here in Arizona next week, and truthfully, I am more than ready - not because my kids will be gone (we homeschool) but because we need the structured environment that lacks in the summer. Anyone who knows me will tell you I have tons of lists and I am a very, very organized person - in a very OCD sort of way. Some of our structured life gets pushed to the wayside in lieu of summer fun and lazy days .... just like most families. I think the lack of structure makes me feel like a dog chasing his tail - and at least for me, it's fun for a little while but I just can't do it long term. I find my kiddos wanting the structure too.

Anyways, the only reason that stuff is remotely important is because we all know that with back-to-school, comes the need for quick and easy meal ideas. Enchilada Stuffed Shells

School starts here in a little over a week ..... it's bittersweet - I'm ready for the structured schedule of the school year - even though I will miss sleeping in until 7 am. Yes, 7 am is sleeping in at my house! During the school year, I am usually up somewhere between 5 - 5:30 am. The problem I foresee, I haven't been going to bed lately until midnight or later ....... it's going to be a hard habit to break - and I may require more coffee than usual! ;)

With school literally days away, I am starting to focus on easier menus and recipes. Maybe some of y'all are too? I don't think easy should mean sacrificing flavor .... or should mean resorting to eating cereal for dinner. (Although, I have been known to feed my family cereal for dinner from time to time!)

These Enchilada Stuffed Shells are easy and kid-friendly! We like to have ours with a green salad on the side and maybe some fresh fruit. While the shells are baking, you can prep the salad and cut any fruit!

I've realized something in the last week - since Google Reader went away earlier this month, I have really tried to find a suitable replacement .... so far, I think I like Feedly the most. The problem is, when I knew Google Reader was closing, I put off finding a different RSS source until I really had no choice. Because of this, I get some of my blogs in my email .... and others are only over on BlogLovin' ... while others over over on Feedly. I realized the other day that there were a whole bunch of blogs I just hadn't seen updates from for quite awhile! I have slowly been trying to go through my emails and BlogLovin' to make sure I am following everyone over on Feedly. I sincerely apologize if I haven't been stopping by and if I haven't seen your posts! :/  Once everything is sorted out, I will probably just delete everything and start fresh ..... it has been so frustrating. Have you handled Google Reader leaving well? Did you procrastinate like me?!

Last year, I hosted an "It's Fall Y'all linky party" and got such a great response from it. I decided I wanted to do it again this year, but this time, with co-hosts! I've rounded up a great bunch of ladies to help and I am so excited to start! Be sure to keep an eye out for when it will be starting in September - anything and everything Fall related is welcome! Who's the grill master at your house? At our house, I am. Burgers are always popular in the summertime and I love changing it up and making different kinds. We have burgers about once every two weeks from about May until September sometime .... which means I need lots of variations! Of course, we eat them throughout the year, just not as frequently as in the summer. One of our favorites is this Pineapple Teriyaki Burger. I hope you enjoy it as well!

We don't go to Red Lobster too often. For one thing, it's way too expensive with a family of 7! Plus, Brian is really not a fan of seafood or fish! Truthfully, although I enjoy fish and seafood sometimes, I only to to Red Lobster for one reason - the Cheddar Bay Biscuits .... Isn't that the reason anyone goes there?! Just me?!

It's a great thing those biscuits are super easy to copycat at home! You probably have everything to make them right now! We can have them any time our little ol' hearts desire! Our family probably has them 3 or 4 times a month at our house - and anytime I make biscuits, my kiddos always ask "will it be the ones with cheese and butter?" This is how I know I'm doing something right as a mom ... my kids love these biscuits - and you will too! Save yourself some dinero, moolah, smackeroo's, dough, dead presidents, money - whatever you wanna call it and make these yourself! :)

Is it just me or does 20 years really go by that fast? Some of my old high school friends have gotten together on Facebook to plan our 20 year reunion .... how did that even happen?! It sure doesn't feel like it's been that long - and hearing that makes me feel old. I don't feel that old - although, I'm not really sure how "that old" feels?!

Right now, there's so much excitement for us since so many of us missed our 10 year reunion - social media wasn't then what it is today! I think we're on a mission to do it right .... For me, I don't know that I will make it back. I grew up in Florida and although I have kept in touch with some of my friends or been reunited with others, I left that place never wanting to look back. I am really on the fence about the whole thing - I'm excited but at the same time - very doubtful that I will go. I'm guessing many other people have been in my shoes and I'm wondering, how did y'all handle it? Did you go?

Any who .... y'all didn't come by to talk about high school reunions, did ya? I didn't think so! :) Let's talk about salads ..... Taco Pasta Salad to be more specific.

All of this talk about reunions made me think of family reunions and church potlucks - and this salad. 

I had this salad at a potluck a few years ago and just had to have the recipe. Have you ever had a dish you just had to have the recipe before you left? This is one for me! Y'all this is one of those salads that I could easily make a meal out of. Seriously, it is that good! I like to eat the leftovers for lunch .... and I don't always like to share it! I hope you'll give it a try!

Classic Fried Fish

Summer is made for fish fry's in my opinion. Growing up, we never really ate a lot of seafood or fish - which is weird in my opinion - because we lived right on the coast! Both of my parents eat it, so I'm not really sure why we didn't have it more often? It wasn't until I was an adult that I really tried some different kinds of seafood besides "fish sticks". Laugh, but I know some of y'all were in the same boat! ;)

I remember this one time when I lived in the Midwest, I went to this popular local restaurant with some friends. It was known for their fried catfish. I decided that's what I was going to order ..... and low and behold, when the bring it out to me, um, it still looked like a dag-gone fish! It had a tail and bones and I wasn't really sure what to do! What do you think I did?! Yep, I ate the other stuff and kind of looked around to see what other people were doing with their fish. Once I had observed enough, I decided to dig in .... and I understood what all the hype was about! I did go back to that restaurant a few other times, but that first experience remains the most ingrained in my mind!

Personally, I prefer my fish without bones and a tail - but do whatever floats your boat. I ain't here to judge no one!

Good morning, friends! It's Saturday - I thought the weekend would never get here! The past two weeks have really drained me! Maybe it's all of this Arizona heat?!

I have been contemplating doing a Facebook party of sorts for some time now. I love sharing stuff from my bloggy friends .... and earlier this week, I was in the shower (don't all of your good ideas come to you there, too?) and I had this crazy notion of doing a party every Saturday on Facebook. I asked my readers what they thought and apparently, they loved the idea too! It'll be a little bit different from the regular Facebook parties because I will be posting a picture every Saturday (if it goes over well - if it's a flop, at least I tried!) and asking that bloggers leave links in the comments of that picture only - it makes them easier for me to find and share - I can go right down the list .... and it should help keep some of my friends out of Facebook jail and out of the spam box! :) Be sure to stop over to my Facebook page at 9 am Eastern time today and share a link in the comments if you'd like me to share it - I'll share as many as I can!

Roadhouse Pizza

Wooooo-weeee! It's almost Friday, y'all! I'm so ready for the weekend!

My family kinda fell off the Friday night pizza night train when we moved to Phoenix .... it's just too darn hot to be having that oven on! Everyone once in awhile, we (by we, I mean I) drudge through and give into our craving. I wanted something a little bit different for our pizza on this occasion .... I came up with the Roadhouse Pizza - it's topped with BBQ sauce and a combination of yummy ingredients like ground beef, bacon, jalapenos, tomatoes, onion and cheese! I wasn't really sure what to call this pizza, but for some reason, the word "roadhouse" stuck out in my mind - so that's what we'll call it. Mmm-kay? I have no rhyme nor reason to what I do, what can I say?!

If you enjoy pizza night at your house, I hope you'll give this version a try .... it has become one of my new absolute faves!

With my mind shifting to back to school, I have wanted to share some easy weeknight meals that are great for when the kids return to school in a few short weeks! Everyone could use more of those, right?

Weekend Round-Up {7-13-13}

I'm beginning to wonder if life every really slows down? Too much to do and never enough time! I'm sure many of you struggle with the same feeling!

As many of you know, Google Reader went away earlier this month .... and I am still not over it. I have tried BlogLovin', Feedly and something called The Old Reader. What are you using to follow blogs? My problem is, I don't think I really like change in instances like this. I don't want to learn a new reader (or 3). Of the readers that I have tried, Feedly probably comes the closest to Google Reader ..... I know a lot of people migrated over to BlogLovin' ... but I am just not feeling it. I stumbled across The Old Reader the other day and used it twice I think? I wasn't impressed enough to go back a third time. If you know of any other readers out there, I would be interested in hearing  about them!

Who's counting down the days until back to school? I know some of y'all are raising your hands or saying, "me ... can they go back tomorrow?!" Even though we homeschool, back to school is always exciting for the kids.

Breakfast Tacos with Ham, Green Chilies, Eggs and Cheese

Do you get excited for breakfast? I have to ask because sometimes I think I'm the only one in the world who doesn't. For the most part, I could take it or leave it - just give me some toast with coffee and we'll call it good. My family on the other hand? They love it all. To each their own, right?!

The only day I really make breakfast any more is on Sunday or if we have company. Otherwise, my family fends for themselves. Now that I think about it, maybe that's why they like it so much - it's not cereal, grits, oatmeal or smoothies! Ha! :)

I think y'all are more than aware by now that I just love Mexican food. Nine times out of ten, if given a choice of where to eat, I'm going to be looking for Mexican food! Living in Phoenix, there are tons of restaurants to choose from - I feel like I've hit the restaurante mexicano jackpot!

When I'm craving something South of the Border for breakfast, I often turn to tacos - because you can't get more Mexican than tacos! In this variation, I decided to use ham, eggs and green chilies. Tacos for breakfast? ¡No hay nada mejor que esto! - It doesn't get any better than this!

Greek Pasta

I shared this on my Facebook page a few weeks ago - and I immediately had people asking for the recipe! Of course, I didn't make them wait - I private messaged it to them because I'm nice like that! ;) Seriously, I believe recipes and good food are meant to be shared - right?!

With summer in full swing in the Phoenix area, I wanted something that was light and meatless. Truthfully, that's been a lot of nights lately! I don't know about you, but heavy meals some times make me feel sick in the summer - especially with all this heat! Do you like lighter meals when it's hot? My family sure does!

My wonderful neighbor, Alyce, likes to bring over some of the veggies from her garden and I am more than happy to put them to use! :) Since we just move into our house in April, we didn't get a garden started this year - we wanted to see how we would actually use our property before committing to a spot for the garden! Next year, I've already got it all planned out though! ;) 

The best part of this dish besides being super cheap, (and it's even more economical if you have a nice neighbor like Alyce or if you grow your own stuff) - is I almost always have all of the ingredients! 

If you're looking for an economical, quick, light, meatless and easy dinner idea .... look no further! This can be thrown together in no time! 

P.S. Feel free to use fresh spinach if you prefer - I bet it's just as great!

BBQ Chicken & Bacon Tater Tot Casserole

Almost halfway through July and I'm busting out a casserole dish ..... and I live in Phoenix?! Hello?! It's hot as heck here! Sometimes, I have to cave in and turn the oven on though. Casserole dishes are just too easy!

Here's a twist on the classic Tater Tot Casserole! This BBQ Chicken & Bacon Tater Tot Casserole is so easy to make - and it's even easier if you use leftover chicken! You will need about 2 cups of leftover chicken.

Cherry Chiffon Salad

This is one of those foods many of y'all may have eaten growing up. Most potlucks seem to have some sort of sweet salad - and this always seems to make an appearance - along with Pistachio Salad! I'm not really a fan of pink, but the color of this salad is just so pretty! People definitely notice it! I never was really sure if these kinds of "salads" were supposed to be eaten on the side or as a dessert .... I've seen it both ways! Either way, it is cool and refreshing, sweet and soooo good! I hope you'll give it a try!

Cheeseburger Casserole

Bisquick, oh how I love thee! The basis of this casserole is the famous Impossibly Easy Pies from Betty Crocker. Have y'all ever tried any of them? I love how easy they are and I always have Bisquick on hand! Actually, I think I almost always have everything for this particular recipe on hand!

With the 4th of July over, many of us are starting to focus our attention on back to school. For most of us, that means fuss-free meals! This one delivers - while it's baking you can be prepping a salad, helping kids with homework or catching up on some emails. Easy peasy!

Happy Birthday, America ... and to me!

Happy Birthday, America!

I hope your 4th of July is off to a great start, y'all! And yes, it really is my birthday today! Pretty cool birthday, eh? For those of you overseas, today is kind of a big day here in the States. Most people have the day off (some of us have a 4 day weekend this year) - and we spend the day with family, BBQ'ing, going to the beach or pool, attending parades, watching fireworks and giving many thanks to the men and women who have fought for this great country! Maybe your country has a similar holiday?!

This is one of my favorite songs - Lee Greenwood's "God Bless the USA" - and I cannot listen to it without crying. What can I say? I'm a big bawl baby! ;) I remember as a kid watching the fireworks in Jacksonville, Florida .... and they would play a compilation of patriotic songs, always ending with this song. 



Although I am proud to be an American everyday, the 4th of July especially  makes me bust at the seams with pride! I love seeing all of the red, white and blue and I love seeing our flag flying everywhere

If you are or were a service member .... I thank you for your sacrifice. I thank the men and women who were willing to give it all - to the men and women who *did* give it all - for my freedom and for the freedom of every American. I thank the spouses and children of these service members who may have had the hardest jobs by letting them go off to war. You truly are heroes for keeping things together at home. I'm thankful to the moms and dads of these service members who instilled some sense of pride and loyalty in their country. I believe we live in the best country on earth because of all of you and your many sacrifices. I appreciate and thank you for everything you have and continue to do to make this country great! ♥
