Taco Tatos

I realized that I don't have too many side dishes posted ..... what is up with that?! I guess I need to start sharing some of those with y'all as well! :)

Yesterday, I shared my recipe for Spicy Southwest Meatloaf and I told y'all I would be sharing these awesome Taco Tatos with you today! In my humble opinion, these are the perfect side dish with that meatloaf! I think they would be equally great with some sort of Southwest seasoned grilled meat as well. Although I have never tried it yet, I would be tempted to cook the potatoes in foil right along with the meat and save myself some clean-up! 

This is one of those side dishes that there is never any leftovers .... my kiddos gobble this stuff up like it's their last meal! I hope you'll give it a try - and if anyone tries cooking them in foil on the grill, I'd love to hear back as to how they turned out .... and if I make them that way, I'll be sure to update this post! :)

Summer is in full swing ..... Have you heard the famous line, "Mom, I'm bored!" yet? I was recently asked by Gloria over at The Resourceful Gals if I would be interested in doing a product review on some e-books her kids wrote! They are a homeschooling family with young entrepreneurs! How awesome is that? Having 4 boys and a little girl, I knew right away that the warfare books from Warfare by Duct Tape would be a hit with my kids ... Abby is still a little too young for the jewelry e-book, but I plan on putting that to good use with the holiday's coming up - and I hope to show you what I created with Jewels by Julia later!

One of the things I really wanted to see with this review was just how easy the instructions were to follow ..... could my 11 and 12 year old son's do this by themselves? Brian used the saw to cut the pvc to length, and other than that, I am happy to report that these were indeed made entirely by my kids! Super, super easy! And the best part? They had tons fun making and playing with them - and even modified what they learned in the book to make their own shield! (The book uses plywood, they used cardboard - it's a lot lighter). :) They also made a smaller sword and shield for Gabriel!

Spicy Southwest Meatloaf

Meatloaf seems to be one of those foods that people either love it or they hate it. There really isn't any middle ground, is there? My family enjoys meatloaf - Dare I say, they actually look forward to it? I probably have 10 or 15 different meatloaves that I have made over the years. While the traditional meatloaf with the ketchup topping is nice and comforting, sometimes it's nice to shake things up a bit.

This Spicy Southwest Meatloaf is a hit with my family! It's not too spicy, but the Ro-Tel tomatoes and chili sauce give it a nice spice without making it too hot. 

We served this up with some Taco Tatoes and green beans. Cornbread muffins on the side would be a nice accompaniment! If you're looking to kick your regular ol' meatloaf up a notch, definitely give this recipe a try - you'll be glad you did!

Fresh & Easy Summer Picnics

Don't you just love the purple mountains in the background and to the right? Definitely one of my favorite things about the Phoenix area! Where I'm from, we just never saw stuff like that! I love that no matter where we go in the Valley, I can see for what seems like forever and there's always mountains somewhere in the scenery!

Speaking of where I'm from - As many of you know, my family recently moved to Arizona. I don't know about y'all, but I love checking out new grocery stores. Weird?! What can I say - maybe it's just me?! In my hunt "to get to know the area," I have discovered Fresh & Easy! I wasn't really sure what to expect the first time we went there - but when Brian and I went to the store, I liked the fact that it felt like a neighborhood market. Not too big, but still plenty of choices - and it carried everything I needed for a summer picnic or for family meals! Score!

I have been hit or miss online this week ... I feel like I have sooo much going on and so many things I need to do. For some reason, I thought it would be smart to reorganize my kitchen cabinets - now, half way through it, I'm asking myself why I would have thought this was a good idea?! Do you ever do stuff like that? You would think I would learn!!

I also have to say that I had the most page views in a single day on Thursday!! I have been averaging around 2,000 (give or take a little depending on the day) every day .... but I had almost 6,000 page views on that day!! I was beyond ecstatic!

As many of you know, I'm not a breakfast eater ... but my kids love anything to do with breakfast! They love it all. Most days, I'm content with my toast and coffee.

From time to time, I like to make muffins (and believe me, I have tons of muffin recipes) not only for breakfast, but I like to have them around for snacks! They're quick, easy and a hit with my kids - and me on occasion! These Strawberry Chocolate Chip Streusel Muffins are a family-favorite .... I hope you enjoy them as much as we do!

Death By Chocolate Poke Cake

Take my advice .... y'all might wanna sit down for this one. And say a prayer. Ask for forgiveness, because what you are about to see is a sin, I'm sure!

What's a girl to do when she wants chocolate? Go all out, of course! I seriously don't think I could have stuffed much more chocolate into this cake without needing some sort of resuscitation! And we're not talking about any kind of chocolate here folks .... when you have a serious chocolate deprivation, only the dark stuff will do!

Feast your eyes upon this dark chocolate cake with luscious dark chocolate pudding and oozy dark chocolate topping ..... marry that with a divine mousse-like chocolate layer and for good measure, give it a full giant-sized dark chocolate bar. Be still my heart .... I told y'all you would need to sit for this!

Apparently, I don't need help finding temptation ..... I can find it all by myself! ... And I found it for you too! ;) This would be a huge hit for any chocolate lover. Be forewarned, people will ask for the recipe so be sure to have it handy!

I'm Fed Up ... And I've Got Something To Say

People that know me in real life will tell you that I'm pretty calm and collected ..... most of the time. However, I do get a little vocal with my opinions from time to time ... and unfortunately, this is one of those times. I keep seeing this dilemma over and over again, and I'm just fed up - so I'm saying something about it!

I truly believe that most people have good intentions ... but I want to educate some folks on a growing problem. What has got me so riled up, you ask?

Frito Pie

Frito Pie is something relatively new to me ..... I never had it growing up. At least, not to my knowledge. Actually, I can probably count on one, maybe two hands, the number of times I have ever eaten it in my entire life. This is one of those meals that makes a pound of hamburger stretch!! Weekend Round-Up {6-15-13}

Another week down .... Man, I'll tell ya, it seems like time is just flying by, doesn't it?! We're already into the middle of June, people!! How did that happen?! I'm still thinking it should be April or May .... but definitely not the middle of June!

I'm getting a really good dose of Arizona right about now too ..... did y'all know it gets really hot here! Triple digits every single day ... and we still have all summer to go!!! I think I might melt! Our neighbor, Alice, stopped by yesterday to bring over some produce from her garden and we talked about the monsoon season and the "haboobs" ..... apparently, they are a sight to see and as crazy as it sounds, I am kinda looking forward to seeing my first one! I've experienced all sorts of weather - tornadoes, hurricanes, earthquakes, blizzards ..... but never a haboob! When people first started telling me about them, I had to ask them what that even was because I had never heard of such a thing!

Italian Chicken Strips

These Italian Chicken Strips are a meal my kids just love! Plus, I love knowing that we are eating real chicken and not some kind of weird science experiment and conglomeration! Sorry, homemade is always better quality and better tasting in my opinion!

We eat about half of this recipe for dinner one night and the rest gets put in the freezer for another night! Is there anything better than getting 2 (or more) meals while doing the "work" for one?!

This recipe is easy to double too - just use the full containers of breadcrumbs and Parmesan cheese - and double the remaining ingredients! My family of 7 can easily get 4-5 meals out of 6 pounds of chicken strips! 

These strips are super simple to make and your family will love them! Enjoy!

Copycat Maid-Rites

Have y'all ever had a Maid-Rite?! Lawd have mercy are they gooo-oood!

So what is a Maid-Rite? It's a loose meat ground beef sandwich! Think of it as a sloppy joe with out all the sauce! Don't be fooled though, there's plenty of flavor going on in there! If you're ever in the Midwest and you have never had a Maid-Rite, add it to your list of things to experience! :)

Now, I'm not one to judge, but I have heard that you're never supposed to put ketchup on a Maid-Rite ..... never ever! And I won't tell if you do! ;) From what I understand, it wasn't until a few years ago that the restaurant would even allow it! Apparently, some purists take that matter very seriously! Also, they don't have visible onions in theirs (if there's any at all - I'm not really sure) .... but I like them, so I add them. Feel free to leave them out if you prefer!

4th of July Apple Spice Cake with Caramel Glaze

The 4th of July just so happens to be one of my favorite holidays .... and not because it's my birthday (it's true, it really is my birthday!) .... I just love the patriotism and seeing all of the red, white and blue ...I love the BBQ's, the parades and the fireworks. I just love all of it! 

Growing up with a birthday on the 4th of July, I believed that all of that fun stuff was just for me ..... and who am I kidding? I still sorta believe it! ;) I believe it is the coolest birthday to have and I'm glad that the the whole country celebrates with me ... well, sort of celebrates with me! I'm sure y'all aren't thinking about Jamie over at Love Bakes Good Cakes while your getting your grub on or while you're admiring the night sky filled with those fantastic fireworks displays! And that's ok .... I'm not even mad about it - as long as you're having fun and enjoying the freedom that so many men and women fought so hard for us to have! I really believe we live in the best country on earth and I'm glad we have a day, that as a nation, we celebrate our independence!

I found this recipe for Apple Spice Cake with Caramel Glaze probably close to 15 or 20 years ago?! It's been so long, I can't even remember! I don't remember the original source, but what I do know is that it reminds me of a very old-fashioned cake .... maybe something similar to what our great great gramma's may have made?! It's full of fruit and nuts with a chocolate-spice tone that's not overly sweet. The Caramel Glaze pairs well with the cake, giving it just a little bit of sweetness. It's such a great cake and I hope you'll give it a try!

The last one we found was in our garage - in one of the glue traps that the exterminator left .... I told Brian we need to buy a gazillion of them if they really work!

BBQ Beefy Mac

Like many moms, I keep blue boxes of mac n' cheese on hand. My kids love it. It's a favorite in our house along side grilled hot dogs and baked beans! As a matter of fact, you can almost guarantee 9 times out of 10, if we're having hot dogs at our house, mac n' cheese and baked beans are on the menu with them!

While there's nothing wrong with plain ol' mac n' cheese, I like to mix things up sometimes! This is a great meal idea for when time is tight .... the whole thing can be done in about 20 minutes! Not to mention, it's fairly budget-friendly! Serve it with a salad or a veggie, maybe some fruit, and you're good to go!

Tuna Salad Sandwiches

Some of y'all are probably like, "doesn't everyone know how to make tuna salad?" or "is she really sharing a recipe for this?" ....... Yes, I am really sharing a recipe for tuna salad! I know there are a million and one recipes out there for it, but I have to make it a million and two - because I like even numbers! :D

I don't know about you, but when the weather gets warmer, I tend to look for simple recipes. I don't want to spend all day in a hot kitchen - and I know you don't either! I am particularly fond of "no cook" recipes in the summer {yes, even us food bloggers take the easy (and cooler) road sometimes - no shame in my game!} - they keep my house cool and they tend to be lighter meals! Who wants to eat a big ol' meal in the summer? Exactly ... no one! We usually eat a lot more sandwiches and cold side salads in the summer, and I'm guessing many other families do as well.

Today, I'm sharing a simple, no-fuss Tuna Salad Sandwich recipe. It's a very basic, no-frills sort of recipe. Sometimes, those are the best ones - aren't they?! Occasionally, I like to top my sandwiches with lettuce and tomato ... other times, it's just straight up tuna salad. 

During the summer, we probably have these 2 or 3 times a month for lunch or dinner. They can be whipped up in no time and they are very budget friendly!

4th of July - Freedom and Independence printables

Hi, friends! I have another set of printables to share with you today! They are all 8x10 size. With the 4th of July just around the corner, we need some patriotic printables in our lives! Don'tcha think so?! ;) I have provided 5 choices - so pick one or all of them!

In my own personal opinion, I would send these to a place like Staples to print off! It saves your ink and the quality is great! The price is very reasonable too - less than $1.00 a page!

{Copycat} Sonic Ocean Water

Did y'all know it gets hot in Arizona?! Ummmm, yeah! I have heard the rumors .... and I have also heard that I haven't seen anything yet! We've been here for about 2 months now and I am loving it here - however, I am wondering how hot it really gets. We've been in the triple digits for about a week now ... and sure, it's hot - I expect that I guess ... we are in Arizona, after all! I am used to having high humidity and there is very little here. I can still breathe when I walk outside! Out on the East coast, the humidity would literally make it miserable to go outside! I think the thing that is the hardest for me is there is no shade ... or clouds .... or "real trees". LOL. Being so fair-skinned and a red-head, that sun will have me redder than a beet in less than 10 minutes! No joke .... If I thought y'all wouldn't laugh at me, I would post a picture of 10 minutes in the sun! Maybe I will somewhere down the road?!

We needed a cold refreshing drink today .... the temperature? A mere 106°F outside. I'm starting to understand why people don't come out of their houses until after dinner around here or I see them out before 9 am. This drink is cool and refreshing - and very similar to the restaurant version. You can have it mixed up and be sipping on it in less than 5 minutes!

Weekend Round-Up {6-1-13}

I've been super busy this week! We've lived in our house for almost 2 months and I'm finding the need to rearrange a few things to fit how we live in the house ... if that makes any sense? When we first moved in, I just wanted to get stuff outta boxes, so I gave things a temporary home. Even in my kitchen. Y'all know that a kitchen needs to function properly .... so I have been moving stuff around. No lie, I have had to put masking tape labels on our cabinets so I can remember where things are! I guess that's what happens when you get used to things being in a certain place!

I also have a whole bunch of new recipes lined up! Y'all are gonna love them. I have been so excited, I just want to publish them all now! But I can't - it'll be feast then famine, ya know? In case you don't know, I am super OCD about "planning things out well in advance". I will just say, my posts (except for the parties and weekend round-ups) are good to go clear into July!

I hope y'all have had a fantastic week .... we're officially into June (can you believe it?!) and most kids are officially on summer break or will be soon! I'm not sure whether moms are happy about that or not?! ;)
