Cowboy Beans

If you ever need a frugal recipe that'll feed a lot of people ..... Consider this as an option! I will tell ya, there's nothing pretty about this dish. It's very hearty and filling though! I'm not really sure what cowboys ate on the trail .... but I'm pretty sure ol' Lucky wasn't toting around canned beans and ketchup. I would like to think that if they could have made their life easier, they definitely would have though!

I remember eating a version of this a few times growing up - probably when money was tight. You can use different varieties of beans too, if that's more your style. You will want approximately 50-60 ounces of beans total. If you like pintos, lima, black beans ..... mix 'em up!

I will say - personal opinion here - but you have to have some sort of cornbread with this meal. It's almost sacrilegious if you don't!

Go West, young man! (or something like that?!)


It's time I spill the beans ..... Only a handful of people knew before yesterday - but some of y'all may have caught in yesterday's post that our family is moving - from Eastern North Carolina to Arizona. Literally, almost clear across the country. Brian and I have never felt "at home" here. We have tried to make a life in North Carolina and it just isn't happening for us. I think I speak for both of us when I say, we just don't like it here. Truthfully, it has been very difficult without any support system.

Asian-Baked Salmon with Veggie Fried Rice

I didn't eat a lot of fish growing up. Truthfully, I have only eaten fish a handful of ways ... and I have only tried a few "kinds" of fish. One of my favorites though, is salmon. I love it and if my husband wasn't so opposed to it, we would eat it more often. 

I think Asian flavors pair well with salmon and it is one of my favorite ways to prepare it. This meal is very low in fat and is full of those good omega-3 fatty acids that everyone tells us we need. It's also a good source of lean protein. If you're looking for a new recipe, give this one a try - it's easy and family-friendly! :)

Better Than Samoas Bars

Girl Scout Cookie "season" is upon us. You may not think of it as a season, but I do ... and I look forward to buying my fair share of boxes every year. It seems this year, I may miss out on all those yummy boxes, unless I can find a table set up in front of my local Wally World. I love the Samoas, Thin Mints and the Tagalongs! 

I wanted a "Samoa" style dessert awhile back and decided to venture into making my own. I didn't necessarily want cookies, because truthfully, I don't like making cookies. I knew I wanted some type of bar or brownie. I used my homemade caramel sauce for this recipe, but feel free to use store-bought if that fits your time and lifestyle better! I liked the idea of adding pecans too ... but they are totally optional.

I hope you enjoy these as much as my family did .... they were so good and the perfect little treat for when it's not Girl Scout Cookie "season". ;)

Chocolate Cherry Cake Balls

I am so excited to be a part of Lady Behind the Curtain's newest venture - A monthly dessert challenge! I was kinda bummed when I found out that the Crazy Cooking Challenge was coming to an end - and when I saw Sheryl had this awesome new challenge, I knew I wanted to be a part of it! This month's challenge was chocolate and cherry. Great combo in my opinion ... and perfect for Valentine's day!

Have y'all ever had an awesome idea .... but when it's time to actually do the idea - it doesn't quite work out the way you had planned?! Uhhh, yeah ... totally happened to me with this recipe. I homeschool our 10 and 11 yr. old's and I enjoy having the kids help me in the kitchen occasionally. I usually give them simple tasks that are age appropriate. Why does that matter, you ask? Two words - cooking spray. I wanted to make big ol' pretty chocolate cake with pink cherry frosting ...... but I had a mishap with the cake sticking to the pan when I flipped it out .... which made a not so pretty cake (it DOES happen to us bloggers too). My 3 yr old politely told me that I "broke" the cake .... great! Thanks for noticing! ;) Apparently, one of the pans wasn't sprayed well enough and it stuck. Ooops! I had to decide if I wanted to start over or just make do ..... (and if you knew I did this post late yesterday afternoon, you'd know starting over wasn't really an option). So, make do it was. 

Cake balls are pretty popular these days .... I have to wonder if they didn't come about from a kitchen mishap?! I am betting they were from an accident! Makes me feel better! Anyways, that's what I decided to go with. You can put 'em on sticks if you'd like .. or just leave in a truffle-like form .... Either way, they are quite tasty and easy to make! I hope you enjoy!

By the way, should you ever do what I did, know that these little balls are the perfect way to save face .... just mix up your "broken" cake with the frosting and dip 'em in chocolate! No one will ever have to know that you "broke" the cake ... unless you blog about it or have a 3 yr. old with a big mouth, of course!

Can y'all believe tomorrow is Valentine's Day?! We keep it pretty simple around here. I wanted some cupcake toppers for tomorrow (being Valentine's Day and all), so I put some together. You know I love to share, so feel free to use them for yourself if you'd like! :)

Classic Patty Melts

This is classic food at it's best. Dare I say, it's better than a regular ol' hamburger? In my opinion, it is! This reminds me of 1950's diner food ..... not that I was around then .... but from what I've seen on tv, this looks exactly like something that would have been served up!

I remember my mom making a sandwich like this when I was growing up. Serve it up with some fries and a dill pickle .... and you've got yourself an easy meal that's a little different than your typical burger!

Hey Girl

Loaded Baked Potato Soup

Would you believe there was a time when I would not eat potato soup at all?! I would sit defiantly at the dinner table and refuse to eat it. My parents would threaten me with "having it for breakfast" ... in which case, I usually responded by reluctantly eating it ..... without chewing - just swallowing and a lot to drink! The thing is, I don't know what it was about it that made me not like it ...... I just didn't like it. 

Long gone are those days. :) I actually look forward to the cooler weather just for a warm, comforting bowl of soup .... and yes, even potato soup! We usually eat it 2 or 3 times during the cooler months. I even have a few different variations of potato soup! I hope you enjoy!

Butterfinger Pudding Cookies

Do you ever have mad-crazy cravings? Recently, I was thinking about making some chocolate and Butterfinger cookies and these tasty little gems were born! Thank goodness I have help eating these - otherwise, I could have eaten the whole batch by myself! Delicious ... soft and chocolate-y, with just a bit of Butterfinger! :) These just may be my new favorite cookie!

Weekend Round-Up {2-2-13}


Omgosh, y'all ..... What a week! Can you believe it's February already .... like, didn't we just start January?! Maybe it's just that life is too busy for me right now to even pay attention?! I have no idea. I just know that life seems to be flying by in fast-forward and I really want to just "breathe" like my bloggy buddy, Evelyn tells me. ;)

I realized a few things this week ..... ok, it's really stuff I already knew but don't like to admit. I'm either really on the ball with things or I am terrible procrastinator .......... there is no middle ground - and it really depends on the circumstance as to how I react. Laundry? I will procrastinate every. single. time. I hate it. A new food idea? You better believe I've got my list in hand and I'm on the way to the store. I'd like to say I "can't help it" ... but the truth is, cooking is way more fun than laundry. (Can a girl get an amen?!)

Peanut Butter Balls

I recently shared this over at Pamela's Heavenly Treats. I'm sharing it here in case anyone missed it!

 One of my absolute favorite things ever is Reese's Peanut Butter Cups. I mean, doesn't everyone love them?! I love anything and everything with peanut butter and chocolate. Many years ago, I set out to make the perfect homemade peanut butter balls and now, I have a recipe I'm particularly fond of. For Valentine's Day, you could use a heart mold for the peanut butter mixture or during Easter, you can also shape the peanut butter mixture into egg shapes and have Peanut Butter Eggs!

This recipe is super quick and requires no cooking - and is a great recipe for kids to help with!
