Meet Linda from With A Blast

Hi y'all! While I'm moving and getting adjusted, some of my bloggy friends have written posts for me! I hope you enjoy this series and find some wonderful new blogs to follow! A big hug and thank you to the bloggers who have stepped in for me during my absence. :) Today, let me introduce you to Linda from With A Blast:

Hi there to all Jamie's readers !

My name is Linda and I blog over at With A Blast . I live in South-Africa and every now and then I will share one of our country's traditional dishes as well as a whole lot of other recipes, some my own, others from all over the world.  It is not only food, I also like to dabble in all kinds of Crafts - feel free to drop in at any time.  The blog is in fact open 24 hours a day and we also do not close on Sunday afternoons for a nap !
Before we go any further, I would like to thank Jamie so much that she allowed me to share a recipe on Love Bakes Good Cakes it is an honor to be here !  Thank you, Jamie - you are a wonderful friend and cook. Jamie is in fact one of my first bloggy friends I made since I started my blog and besides the fact that she is a great friend, I have tried quite a few of her recipes and they were all received very well indeed by my family.

Whilst Jamie is on her way to a new and exciting chapter in her life, we will keep up with the daily goings on in blogland.  Jamie - have a good and safe trip, my friend!

Roasted Spice Mashed Potatoes
1.5 kg Potatoes, peeled and cut into chunks
3 TB Butter
100 - 200ml Milk
Salt & Freshly Ground Black Pepper, to taste
2 TB Olive Oil
2 t Coriander Seeds
2 t Cumin Seeds
2 Whole Star Anise
1 Whole Cinnamon Stick

1.) Boil the Potatoes in lightly salted water until soft - Drain and mash - Add the Butter and some of the Milk until you get your preferred consistency. Season with Salt & Pepper {not too much - the roasted spice must still be added - you can always add more Salt & Pepper just before serving}

2.) Whilst the Potatoes are boiling - heat the Olive Oil in a small saucepan - add the Coriander, Cumin, Star Anise and the Cinnamon stick.

3.) Sizzle the spices over medium heat for 2 - 3 minutes {it blackens quite quickly - that is fine} - remove from heat.

4.) Steaming hot as you can see above !  - Remove the Cinnamon Stick and the two Star Anise - place the remaining Oil and Spices in a mortar and pestle {or anything similar}

5.) Grind the Oil and Spices until you get a smooth paste.

6.) Stir the Roasted Spices into the Mashed Potatoes and adjust the seasoning, if necessary.

Serve with meat and vegetables.
