What a week! I am actually kind of glad it's over. I am hoping to find some down time this weekend to relax and just breathe. Do you ever have weeks like that? There is always a million things to do ... and I swear, never enough time to do it all. Maybe the ability to just chill during the holiday's hasn't been shaken yet and we just have to get back into the swing of things?! I don't know .... Here's to a better week :)

For this week's Menu Plan Monday, we had a few things carry over from last week. We tried a new soup on Wednesday. It was a cross between a chili and a vegetable soup and my family declared it a winner! The recipe will be coming to the blog in the future :) Our other meals were tried and true. I am still working on next week's menu .... and I really need to get my butt in gear since my shopping day is Saturday morning. ;)

Thursday, I had a guest post over at Pamela's Heavenly Treats. I shared my easy, no-cook Peanut Butter Balls. Tasty, tasty, tasty and it satisfies those chocolate and peanut butter cravings! ;)
Yesterday, I shared this Pico de Gallo ...... It's my go to recipe when I want fresh flavors fast! It's great with all of your Mexican recipes, put some on your scrambled eggs or just stick some tortilla chips in it! Ya can't go wrong with this wonder Salsa Fresco!
